Need a new easy breakfast idea for your children? Try this mean, green, zucchini frittata! It’s a great way to explore new colors and textures in food and includes a healthy balance of carbohydrates, protein, and healthy fats to keep your child healthy and satisfied.

Nutrition Benefits of Eggs

Eggs are a good source of protein, which will help make this meal feel satisfying and help your child feel full. Eggs are a complete protein, meaning they contain all the amino acids your body can’t produce on its own, so they offer good building blocks for growing bodies! Eggs also contain a nutrient called choline, which is important for a healthy brain and nervous system. 

Veggies and Healthy Fats for a Healthy Brain

Adding zucchini and pesto to the eggs offers a fun natural green tint with healthy fats to support growing brains and a tasty veggie boost! Zucchini also offers some fiber, vitamins, and minerals in a tasty serving of vegetables. Pesto typically includes leafy greens, olive oil, and nuts like pine, walnut, or pecan, which makes it a healthy fat powerhouse! I recommend walnuts because they provide an excellent source of alpha-linolenic acid important for brain health. 

Pro tip: I like using a cast iron skillet for cooking this zucchini frittata since it offers even heat distribution and a boost in iron.

Zucchini and Pesto Frittata

This tasty Zucchini and Pesto fritatta is a great way to explore new flavors, textures, and colors

Ingredients

  • 1 egg
  • ¼ cup shredded zucchini
  • 1 Tbsp. pesto
  • 1 Tbsp. feta
  • medium Hass avocado
  • 1 slice whole-wheat bread

Instructions

  • Heat a non-stick skillet on medium heat and lightly coat with oil.
  • Crack an egg into a bowl and whisk with pesto, cheese, and zucchini.
  • Pour egg mixture into skillet.
  • While the egg is cooking, toast the bread.
  • Mash avocado with a fork and spread on top of toast.
  • Once the egg mixture is cooked, pair with avocado toast or put on top and serve!
