Ingredients
- 1 egg
- ¼ cup shredded zucchini
- 1 Tbsp. pesto
- 1 Tbsp. feta
- ⅙ medium Hass avocado
- 1 slice whole-wheat bread
Instructions
- Heat a non-stick skillet on medium heat and lightly coat with oil.
- Crack an egg into a bowl and whisk with pesto, cheese, and zucchini.
- Pour egg mixture into skillet.
- While the egg is cooking, toast the bread.
- Mash avocado with a fork and spread on top of toast.
